I'd like to pay for spotify for my Dad. How do I do that?  And no our shops no longer sell the gift cards in South Africa otherwise I would've done that already.  I have done so previously for the last 2 years but now can't.  Please help.  My Dad can't sleep without his music so I'd like to get this sorted out asap please.  TIA

Gift cards are the best option to buy Premium for someone else, but as you said yourself the availability of these cards can vary over time and using cards from other countries isn't possible. You can subscribe to Premium from their account, but this can lead to many issues and confusion so we strongly advise against it. 

If you and your dad live together, the most sensible solution would be to get a Duo or Family plan from your account and invite him as a member. That way, he can enjoy Premium while you handle the payments 🙂
