Episodes won't download automatically if you're just following a podcast, however, you can easily change this setting and choose to have upcoming releases downloaded automatically. Just head over to the phone app > open the podcast which episodes you like to have downloaded > click the cogwheel > select Auto-download episodes.
While it's not possible to download all episodes of a podcast a once, an option is to add all the episodes you'd like to have available for offline listening into one playlist. You can then download that specific playlist to have your downloads in one place.
Also, since you mentioned that you might be without internet for more than a month, please note that you need to go online at least once every 30 days to keep your tracks downloaded. Feel free to check this article for more info about downloads and offline listening.

Shocking. Really bad practice that I can't download all the episodes of a podcast at once. Why not????
What about for Mac users? I want to listen on my computer and even when I download them one by one they disappear. What do I do?

@oz-5 - Just to check, does this happen with downloaded episodes from a specific podcast? Or does it occur with all podcasts that you download?
We also recommend double-checking the steps under Track, playlist, or podcast not downloaded anymore? on this page, as it's possible that they might help in your case. It's also worth having a look at Not downloading? on the same page, just to make sure we cover all bases.
Should the issue persist, could you let us know if you've noticed that your downloads disappear at any specific point? For example, after restarting the Spotify app, restarting the device, or after finishing an episode.

In a similar vein, I have recently started listening to a podcast that has more than 300 episodes and I listen to it when I'm offline. Am I meant to manually download each of the 300 episode before listening?
