Quality tanks when on VOIP (Discord)

I have this situation popping up, and here is my set up.

iPhone 7 running the latest iOS
AirPods is my bluetooth audio solution.

Before I used to use my wired EarPods where when I had Discord on the music would get lower but I could still manage the volume in Spotify. Now when I use Discord the quality of the music tanks AND I can't control the volume on Spotify. It still gets quieter by default but doesn't sound good at all.
