My son set up the account but need to change ownership to myself as he cannot recall his login info.

You son should ask for a password reset. That should give him access to his account again.
Then, he would have to cancel the Family plan, and then you can upgrade here your own account. If successful, you'll be able to reinvite all your Family members.

How do I do that, and not have to cancel account, as dont want to lose playlists

In this case, your son needs to cancel your Family Premium, and once it's done, upgrade your own account here to the Family plan. Be sure to check that you're logged in to the website and the app using the account you want to pay with.
Then, you'll be able to link the other family members to the plan through the Spotify website.

You won't lose any playlists, friends, or your music library, as long as everyone keeps using their own personal username everyone has been using. Those are independent from your subscription status. 🙂

My brother and I had a family subscription whom my brother had the ownership. He forgot his password and also mail address he used for subscription. Now he can't use that account and started a new one.
I want to cancel our family subscription. Can you help me?

If you contact support from your account, the support reply may probably go to an email you don't have access to.
Log out of the Spotify website in your browser and fill out this contact form. Someone from Spotify will be happy to help you out.
Make sure you are logged out of any Spotify account in your browser when using the contact form or the username and custom email field will not show up. It is important so that you can enter the information of the account you are having trouble with. If you are logged in with a different account that is not having the problem, that account info will be used and support will be confused.
You should get a reply within 24-48 hours. Don't forget to check your spam folder for responses as they may end up there.
If you get an automated email directing you to the community or help pages, you need to reply directly to that email (even if its from no-reply) and one of the customer services agents will get back to you.
