So I understand that as the account holder I sent a link to the persons email to join or connect to the family plan. So does that mean that they will have their own log in and everything? also will music downloaded on one account be seen by the others?

Yes they will have their own account that they can use. If they already have a spotify account they can use that. If not then they would have to create an account. 

And No for the download music question. Since everyone has their own account no one can see what music is downloaded. However if you wanted to share the playlist or collaberatively do so, you can set the playlist to be a collab playlist.
