Can’t seem to fully quit out of Spotify

My Question or Issue

I understand that to quit out of Spotify on an iPhone we’re supposed to double tap the home button and then swipe up. But even after I’ve done that, the song I was listening to will appear on my lock screen, paused. And if I plug in my iPhone to my car to listen to something else (e.g audible) after having “quit” Spotify, Spotify almost always takes over and starts playing right where I left off- I then have to “quit” (double tap home, swipe up) and go back to the other app- sometimes a couple times- before Spotify stops playing & lets the other app play. 

Is there some way to actually quit the app? End the song that was playing rather than pause it?
