Heyyaaa, so If certain Echo devices are showing as "unavailable for listening" in the Spotify Connect menu in the Alexa app, there are a few things you can try to troubleshoot the issue:
Check the Wi-Fi connection: Make sure the Echo devices are connected to the Wi-Fi network and have a strong signal. Weak or unstable Wi-Fi connections can cause devices to drop off the network and become unavailable.
Restart the Echo devices: Try restarting the Echo devices that are showing as unavailable. You can do this by unplugging them from the power source for a few seconds, then plugging them back in.
Check for updates: Make sure the Echo devices and the Alexa app are updated to the latest software version. Outdated software can cause compatibility issues.
Re-link the Spotify account: Try unlinking and re-linking the Spotify account in the Alexa app. This can sometimes help refresh the connection and fix issues with unavailable devices.

Wifi is stable the same device showing unavailable for listening on works if I tell it "Alexa play artist on Spotify"
Restarting the echo device works but the problem can return on the same device without any reason. Also, not helpful that the device can't be restarted remotely.
Amazon Echo is already on the latest version - also tried completed resetting it, re-registering it and the problem still returns.
We already relinked the accounts to no avail.
This isn't an Amazon Support problem because the Alexa works on its own, the problem is ONLY with the Spotify iOS App. On the same device I can login to Spotify on the web and Connect to that device as well as using the Desktop browser. This is ONLY on the iPhone app. I've tried multiple devices on different iOS versions and the same devices showing unavailable for listening on show that way on every device. This is a Spotify app issue.
If the issue seems to be specific to the Spotify app on the iPhone and the problem persists even after relinking the accounts and resetting the Echo devices, it is possible that the issue is related to the Spotify app itself.
Here are some suggestions that you could try:
Clear cache and data of the Spotify app: Go to the Settings of the iPhone, then tap on General > iPhone Storage > Spotify. Tap on "Offload App" and then "Delete App". Re-install the app, then re-login with your credentials.

It is also possible that the issue could be related to the number of devices connected to the same Spotify account. With over 60 Alexa devices connected to the same Spotify account, it is possible that there could be some limitations in terms of the number of devices that can be connected at the same time. You may want to check with Spotify support to see if there are any limitations in this regard.
Standard limitations:
Spotify allows users to connect up to a maximum of 5 devices to one account at the same time. This includes any combination of smartphones, tablets, computers, and other devices that support the Spotify app.
However, it is important to note that this limit only applies to the number of devices that can stream music simultaneously. Users can connect more than 5 devices to their account, but only 5 devices can play music at the same time. If a sixth device tries to play music, it will stop playback on one of the other devices.
In addition to this, there is a limit of 10,000 offline tracks per device for Spotify Premium users.

This seems to be a major issue in the UK. I tried spotify and Amazon and sono's helplines/chat/community, found so many people with the same issue. Unfortunately sonos/alexa simply does not work any longer with spotify. My only solution is to cancel my spotify membership and join amazon music. seems like I'm being held to ransom but this is the only way it will work.
