Is there a way to start out with the free trial, and then switch to paying with the student discount when the 30 days ends?

Hi @gabejwachs97 thanks for posting in the Spotify Community! 

If you sign up to a Spotify account you can change your subscription type whenever you like. You can sign up to the Spotify Student account here but for best results do it towards the end of your trial period. If you do not enter your financial information when signing up to the trial you will not be charged anyway and your account will simply revert to a free account until you do move back to student or premium.
