Do crossfade and gapless playback use more data?

Not at all, all you're doing is starting the second track earier. It's still the same amount of data being used.

 

FYI as a general rule of thumb the below should provide a good idea of the data usage:

Normal Quality (96 kbps) - 0.75 MB per minute
High Quality (160 kbps) - 1.25 MB per minute
Extreme Quality (320 kbps) - 2.5 MB per minute
