I have disabled auto-adjust and set the quality to very high, but occasionally it switches to low and it's not possible to change it back.

Spotify on macOS works just fine. And no, clean reinstall didn't help.

As you mention this occurs only when using 5G, could you double-check the device's data/network settings to ensure that Spotify is allowed to use enough data? If possible, you can try changing the data usage/limit set for the Spotify app (if any), to see if it makes any difference.
In the Spotify app, we also recommend making sure that Data Saver is toggled off in the app settings, as this may cause behavior similar to what you're describing. It's worth having a look at your phone's battery settings as well, to see if Spotify is set as an exception, if you're using the battery optimization option.

We get what you mean, but the network has a lot of influence on audio quality, so the info requested is to help us narrow down a possible root cause and ultimately find a solution. To that end, please send us the info provided by @Maria.
In addition, you said that the setting cannot be changed after it switches on its own. Could you please send us a screen recording of this behaviour so we can take a closer look? If the files are too large to attach here in the Community, you can send them to us via Google Drive or as unlisted YouTube videos.

No, the rest of the settings is fine, it's only the audio quality settings that don't work.
I triple checked the network settings. It's NOT that.

My Question or Issue
I've been having an ongoing issue within the last month where I'll just be listening to music and it'll randomly lock my sound quality on low even though I set it to high. It greys out the option to change the sound quality, stating it has something to do with data saver settings. But I don't have that setting turned on in the app or my phone. The app also has unrestricted access to my phones battery even if battery saver. I'm not sure what could possibly be causing this issue, but the only solution I've found so far is uninstalling and reinstalling the app. It's getting to the point where I'm doing this 5-10 times a day and I'm getting frustrated. Why am I paying for premium if it's going to lock the sound quality to low? If anyone has an solutions besides what I've already stated it'd be greatly appreciated.

We suspect there's a setting on your phone that's restricting the app from using your full network bandwidth so it's a good idea to check with Google support where to find it.
From what we could find after a quick web search, you can check Settings > Apps > Spotify > Mobile & WiFi data > Background data, but the settings might differ on your particular device model.
