My Question or Issue

I just subscribed a premium duo account to be able to listen to Spotify at the same time as my girlfriend but each one our own music on our respective devices, but every time we try it, it turns out the music on one of our devices...

How do we manage to listen each one to our own music simultaneously??

You both need a separate account. How to add the second account to the Duo plan, you can read in this support article.
