We'd recommend that you look for "Music" in your Samsung Settings. Check if you had a routine set up for when the Bluetooth earbuds get connected. If you are experiencing this in your car as well - check out if you have Driving routine that includes Spotify. More info about Samsung routines and how to manage them can be found here.
It's also a good idea to take a look at this thread as you can find a few setting options in the floating message that helped some users fix this.

Thanks for getting back to us.
You've mentioned in the original post that you've noticed the issue is present when a phone is connected to Bluetooth devices and that might caused the confusion here. In any case, we'd suggest that you try the following:
On your mobile device open Settings > go to App's > find the Battery setting and disable the option "Allow Background Activity".
In case the above doesn't fix it, we'd recommend that you reach out to Audi MMI customer support team to get help with the Bluetooth configurations.
You can also check out different ways to connect Spotify to your car stereo for listening here.
Keep in mind that the behavior of the app when connected to Bluetooth device, including Audi MMI system varies based on the device involved. However, we’re constantly optimizing our app, so this behavior might change in future updates.

I have the same annoying experience with Spotify installed in my smartphone, the same briefly explained here by Pagetto. Please tell me what shall I do desctive the app.. I really thing that it's also dangerous because SPotify is playing automatically in the car's bluetooth and I have to turn off manually each time I finish a phonecall for exemple. I really don't like it .

Every time I put away my Galaxy Buds+, Spotify automatically starts playing on the phone, even if it wasn't open before.
